Sardine & Avocado Sandwich

Open Sandwiches & Bruschetta

Makes 8 open sandwiches

1 small baguette, sliced
2 tins sardines (Mediterranean style)
1 large avocado (or 2 small ones)
1 garlic
dijon mustard
olive oil
salt & pepper to taste
lemon or lime juice
herbs de provence

1) Lightly brush sliced baguette with olive & toast it under a broiler for 3-5min.

2) Cut garlic in half, rub the cut side on toasts.

3) Spread a thin layer of dijon mustard on toasts.

4) In a bowl, mash avocado. Season mashed avocado with salt, pepper & lemon juice to taste.

5) Spread a thick layer of mashed avocado on toasts, carefully lay a piece of sardine on each toast. Squeeze a little lemon juice on sardines & sprinkle some herbs de provence on them. Enjoy.
