Salmon with Lemon-Mint Dressing | Caprese Salad with Avocado

Serves 2

2 (170g) salmon fillets
salt
pepper
1 tablespoon olive oil

Dressing:
zest of 1 lemon
2 tablespoons fresh lemon juice
1/4 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 tablespoon cup olive oil
1 tablespoon chopped fresh mint

fresh mint sprigs for garnishing (optional)


1) Whisk together lemon zest, lemon juice, sugar, 1/4 teaspoon salt, and 1/8 teaspoon pepper in a small bowl; slowly whisk in 1 tablespoon olive oil. Stir in mint. Set aside.

2) Season salmon with salt & pepper.

3) Heat 1 tablespoon oil in a large skillet over medium-high heat. Sauté salmon 4 to 5 minutes on each side or until desired degree of doneness. Drizzle with dressing. Garnish with mint sprigs, if desired.
