Pasta with Avocado Mint Sauce & Baked Salmon

Serves 2

150g pasta

1 ripe avocado
1/4 teaspoon finely grated garlic
2 teaspoon lemon juice
zest of 1 lemon
salt & freshly ground black pepper, to taste
a handful of chopped mint

200g salmon fillet
salt & freshly ground black pepper
lemon juice

1) Season salmon with lemon juice, salt & pepper, and bake it in a preheated oven at 180°C for about 12-15 minutes. Flake the cooked salmon and side aside. Alternatively, you could pan fry the salmon with some olive oil.

2) Bring a large pot of salted water to the boil then cook pasta according to package directions. Once cooked, reserve 1 cup of hot pasta water then drain pasta.

3) In a large bowl, add avocado, garlic, lemon juice, lemon zest, salt and pepper. Mash the avocado & mix well. Taste then adjust salt and or pepper as needed.

4) Add cooked pasta, 1/4 cup of the reserved pasta water, chopped mint & salmon flakes to the avocado mixture. Toss well. Add more reserved pasta sauce if needed.

5) Serve immediately.
