Caprese Salad with Avocado

Dijon Almond Crusted Cod | Caprese Salad with Avocado

Serves 2

1 cup cherry tomatoes or grape tomatoes
1 buffalo mozzarella (preferred; cut into small chunks) or 12 mini mozzarella balls
a handful of basil
1 avocado (cut into small cubes)
1 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
salt & pepper to taste


Tossed all ingredients together & seasoned with salt & pepper to taste.
