Sticky Cinnamon Figs

Serves 2

2 ripe figs
2 tsp coconut oil (or butter)
2 tsp honey
10 shelled & chopped pistachio nuts (or almonds)
ground cinnamon (or mixed spice)
1 cup mascarpone or Greek yogurt, to serve

1) Preheat oven to 220 degrees celsius.

2) Cut a deep cross in the top of each fig then ease the top apart like a flower. Sit the figs in a baking dish. Drizzle the honey over the figs, then sprinkle with the nuts and ground cinnamon.

3) Bake for 15 mins until figs are softened (with juice oozing out).

4) Serve warm, with dollops of mascarpone or greek yogurt and more sprinkle of ground cinnamon.
