Spicy Baked Chicken

Spicy Baked Chicken

Servings: 2

1 tablespoon olive oil
Juice of 1 lemon
¼ teaspoon garlic powder
¼ teaspoon ground cumin
¼ teaspoon cayenne
¼ teaspoon turmeric
¼ teaspoon paprika
2 Thai chiles, roughly chopped (optional)
Salt and freshly ground black pepper
2 pieces organic chicken breast, washed and dried (450-680g)
1 pint grape tomatoes, pierced with a fork or knife

1) Preheat the oven to 180 degrees celsius.

2) In a mixing bowl, combine the first 9 ingredients. Then, add the chicken breasts and evenly coat the meat with the mixture (make sure to wear gloves per the note above). Add the tomatoes and mix together.

3) Arrange the meat and tomatoes on a foil-lined baking sheet, pouring any additional liquid on top. Bake in the oven for 20-25 minutes until the juice runs clear. Serve immediately, spooning the pan juices over the meat or on top of rice if using.

p/s: I think this spiced marinate will work well with salmon too. But I will omit the Thai chilli for the salmon though I like it with the chicken. I just don't think salmon & Thai chilli go well together.
