Pancake by Pierre Hermé

Pierre Hermé Pancakes

100g Crème Fraîche or Greek yogurt
30g Whole milk (2 tablespoons)
1 Egg
25g Golden caster sugar (2 tablespoons)
Pinch of salt
Pinch of vanilla powder (or vanilla extract)
90g All purpose flour (3/4 cups)
5g Baking powder (1⅓ teaspoons)
2 Egg whites

40g Unsalted butter for frying pan

1) Sift the flour, vanilla powder (if using vanilla extract mix the extract with the cream instead) and baking powder together.

2) Whisk egg, cream (or Crème Fraîche), milk together with sugar and salt until combine. Add the flour mixture and whisk until smooth.

3) Whisk the egg white until soft peaks formed, then fold the meringue into the flour mixture.

4) Put the pan over medium low heat, melt some of the butter and fry the pancakes.
Serve immediately with maple syrup and butter.
