Blueberry Sauce

3 cups fresh or frozen blueberries, rinsed
1 cup vanilla sugar
1 tablespoon fresh lemon juice
1 cup water

1) Combine the blueberries and vanilla sugar in a large heavy saucepan. Add water and lemon juice. Bring to a boil over high heat, stirring occasionally. Reduce the heat and simmer for 15 minutes, or until the mixture begins to thicken.

2) Remove from the heat and strain through a fine sieve. Cool to room temperature, cover and refrigerate.

P/S: you can choose not to strain through a fine sieve.
