Shiroi Koibito。黑之戀人

63g Egg White
60g Icing Sugar
60g Cake Flour
1/2 tsp Vanilla Extract

1) Creamed butter & sugar. Whisk in egg white in thirds.
2) Stir in flour in halves and mix well. Add vanilla extract.
3) Place cookie mould on non-stick baking sheet. Spread batter over the mould & gently scrape away excess.
4) Carefully remove the mould.
5) Bake in preheated oven at 190°C for 8-10 minutes.
6) 6) Cool the cookies before removing them from the baking sheet.

100g Bittersweet Dark Chocolate (>70% Cocoa would be preferred)
20g Whipping Cream

1) Heat up cream. Add in chopped dark chocolate & melt over a double-boiler.
2) Let the mixture cool.
3) Spread chocolate mixture on a cookie and sandwich them.
