Tom Yum Grilled Shrimp


4 servings

Ingredients:
1 pound shrimp (peeled and deveined)
2-3 lime leaves
2 stalks lemongrass, chopped
3 cloves garlic
1 thumb sized piece galangal, peeled & chopped
2 red chilli padi
1/4 cup cilantro, chopped
1 thai lime (juice and zest)
2 tbsp fish sauce
2 tbsp vegetable oil
2 tbsp brown sugar

Directions:
1. Place the lime leaves, lemon grass, garlic, galangal, chili, cilantro, lime juice and zest, fish sauce, oil and brown sugar in a food processor and process.
2. Marinate the shrimp in the paste for at least 10 minutes (not more than 20min).
3. Skewer the shrimp (optional).
4. Remove as much of the marinate as possible as they will burn on hot grill.
5. Grill until cooked, about 2-3 minutes per side.

This recipe is good for fish & chicken too. For chicken, marinate for at least an hour. Overnight would be best.

Cheats: marinate shrimps with ready-made tom yum paste for 20 minutes.
