Thai-Inspired Beef with Pak Choy

Serves 2

2 (8 ounce/ 225 gram) sirloin steaks
Sea salt and freshly ground black pepper
1 packet pak choy
4 chilli padi, deseeded and finely chopped (u may wanna leave the seeds on for 1 chilli padi)
2 tbsp ginger, finely grated
1/2 a garlic clove, finely grated
3 thai lime, juiced (can be more or less, adjust to your taste)
1 thai lime zest, finely chopped
4 tbsp soy sauce
2 tbsp thai fish sauce
1 tbsp brown sugar
1 tbsp olive oil

1) Mix chilli padi, ginger, garlic, lime juice, lime zest, soy sauce, fish sauce, brown sugar & olive oil. Let it sit in fridge to infuse. U may wanna add a bit of water if u find it too "concentrated".

2) Season the sirloin steaks with salt & pepper & cook on a hot griddle pan until medium or to your liking. Place in a plate and allow to rest for 2 minutes.

3) Now cook your greens in salted boiling water until tender.

4) When the greens are cooked, simply divide onto two plates & doused them with a couple spoonful of the infused sauce while hot.

5) Thinly slice up the sirloin steaks, place on top of the greens and drizzle with any of the infused sauce left on the resting plate.
