Grilled Halibut with Dill

4 halibut fillets
1 lemon zest
1/2 lemon juice
a handful of fresh dill
olive oil
salt
ground black pepper


1) Sprinkle salt & pepper on both sides of the fillets and rub gently.
2) Add lemon zest, fresh dill and olive oil.
3) Marinate for 20 minutes (do not leave the marinate on for longer than 20 minutes).
4) Grill fillets on a hot griddle pan for about 3 minutes per side (make sure they are cooked thru yet not overcooked).
