Nutella-Vanilla Bean Cupcakes

1 3/4 cup cake flour
3/4 cup castor sugar
3/4 cup (or 170g) unsalted butter (softened)
3 large lightly beaten eggs (room temp)
1 vanilla pod
1 tsp baking powder
nutella

1) Cream softened butter with an electric mixer until the butter changes colours.

2) Add sugar to the butter and whisk till it's pale & fluffy (approx. 2 mins).

3) Add 1 lightly beaten egg at a time & beat on slow for 15 sec between each addition.

4) Add vanilla beans & milk.

5) Fold in sifted flour, baking powder & grounded cinnamon powder (mixed these in a separate bowl first).

6) Spoon batter into cases until they are approx 2/3 full.

7) Add a small dollop of nutella to each cases and swirl it with a toothpick.

8) Bake in a preheated oven at 180˚C for approx 18-20min or until a toothpick comes out clean, then remove & let sit for a few min being removing the cupcakes from the tins & placing them on a wire rack to cool.

Note: If you are using a convection oven, bake at 160˚C for approx 16-17min.
