Bacon & Cheese Muffins

Dry Ingredients:
2 cups all-purpose flour
2 tablespoons sugar
3 teaspoons baking powder
1/4 teaspoon salt
1/8 teaspoon ground black pepper
3 tablespoons Italian seasonings (a mixture of Italian herbs in a bottle; available at most supermarkets)


Wet Ingredients:
1 egg (beaten)
1 cup milk
1/4 cup oil (oil from frying bacon and vegetable oil)

Additional Ingredients:
1 cup shredded Cheddar cheese
8 smoked bacon strips

Method:
1) Pan-fry bacon till it’s lightly brown. Do not overcook the bacons. Save the oil from the bacon in a bowl and cool it for later use. The oil will add more flavour to the muffins.

2) Chop the cooked bacons into small pieces.

3) Mix all dry ingredients together in a mixing bowl.

4) Mix all wet ingredients together in a mixing bowl.

5) Mix wet mixture (#4) to dry mixture (#3).

6) Stir in bacons and cheese to the muffin batter (#5).

7) Line the muffin pan with paper linings.

8) Fill the muffin cups till they are 2/3 full.

9) Bake in a preheated conventional oven at 200°C for 15 to 20 minutes.

10) Cool the muffins for 5 minutes before removing them from the pan.

11) Taste best when muffins are hot or warm.
