Lemon Meringue Cupcakes

Lemon Filling
400g condensed milk
3 tbsp lemon juice

1. Mix condensed milk with lemon juice in a small bowl.

2. Cut a small hole in the centre of each cupcakes & dig out with a spoon.

3. Fill the hole with the condensed milk & lemon juice mixture.

Meringue Topping
3 egg whites
7 tbsp castor sugar
1/4 tsp cream of tartar

1. Use an electric mixer, beat the egg whites and cream of tartar until they form soft peak, then beat in the sugar gradually. (add sugar 3 to 4 movements beating thoroughly between each one)

2. Use a star tip and then pipe drops the meringue over the top of the cupcakes.

3. Place the cupcakes back into the oven set to 250˚C for 3-4 min or until the meringue is golden brown.

4. Cool a few min before serving.
