Strawberry & Blueberry Mini Cheesecakes

Serving for 6

base:
6 oreo cookies
1 tbsp butter

1) crush oreo cookies & mix well with melted butter.
2) pressed into baking cups.

Note: can substitue oreo cookies with digestive biscuits.

cheesecake:
2 pkt philadelphia cream cheese
1/2 cup sugar
1/2 tsp vanilla essence
2 eggs

1) beat cream cheese, sugar & vanilla essence on medium speed until well blended.
2) add egg one at a time, mixing on low speed.
3) pour over base.
4) bake in preheated oven at 140 degree celsius for 50min.
5) let the cheesecakes sit in the slightly opened oven for 20-30min.

toppings:
3 strawberry
1 pkt blueberry
1 tsp gelatine powder
100ml hot water.

1) wash the fruits & cut strawberry into half.
2) mix gelatine powder with hot water.
3) brush gelatine mixture on the cooled cheesecakes.
4) arrange the fruit toppings on cheesecakes.
5) brush gelatine mixture on the fruit toppings.
6) chill cheesecakes in refrigerator for 5hrs.
