Yam Paste

Taro (yam) 600 g
Gingko 80 g
Sugar 220 g
Spring Onion 4 sections
Lard 3 tbsp (can be subsitute with normal cooking oil)

Method:
Taro (yam) 600 g
Gingko 80 g
Sugar 220 g
Spring Onion 4 sections
Lard 3 tbsp (can be subsitute with normal cooking oil)

Method:
1) Boil gingko with shells in water for 10 minutes
2) Remove shell and membrane of gingko
3) Halve, remove seed and parboil in hot water
4) Drain away the water and season with 1 tbsp of sugar
5) Peel and wash taro then cut into thick pieces
6) Steam until fully cooked and cut into dices when it has cooled down.
7) Add 1 cup of water, mash it into smooth gruel
8) Heat wok and add lard, fry spring onion, then remove it
9) Add gingko and cook in low heat for a while
10) Add mashed taro and sugar, stir fry in low heat for 10 minutes and serve

Remark:
ermmmm.... coconut milk seems to be missing from this recipe.

500 g Yam (steamed and mashed when its HOT)
140 - 160 g Sugar
80 g cooking oil
8 shallots (slice)

Method:
(1) Fry the shallots in oil till fragrant. scope up the golden brown shallots. you can keep it in a air tight container to serve as a ganish for other dishes.
(2) Add in mashed yam, and sugar and fry till almost dry.
(3) When you wan to eat it as or nee, just steam it with coconut milk n gingko nuts will do.
